Epic Taco Thursday Garden Harvest!

Check out my harvest for today and what I did with it

I am especially happy with the peppers they have been ripening for a while. They are so red they are hard to photograph, they look fake. The eggplant is also stunning, this is the third I have picked from this plant so far. That one cucumber is pretty wild looking. Finally I have started getting a decent number of tomatoes, I guess Mr. Skunk is getting his fill.

I have been under the weather and didn't feel very adventurous culinarily today, so I pulled out the good old taco kit.

But, what can I do with those beautiful peppers to do them justice?

    @funbobby51 I always prefer home products over market products. All the vegetables looks nice and healthy.

      Thank you, it's my pleasure. I am really pleased with the results this year, I guess there have been good conditions. The plants do all the hard work.
