False Morels! The Toxic Look Alike

This mushroom is deadly poisonous raw, but can be boiled or dried to eliminate its toxins making it edible. Still, it isn't easily digested and causes gastrointestinal distress for many who eat it.

From a chemist's standpoint this mushroom is extremely fascinating. It contains the toxin gyromitrin which breaks down to produce a small amount of highly volatile MMH or rocket fuel. It's highly toxic when fresh and requires some attentive care and caution during preparation. Even after boiling the mushroom can contain carcinogens. While drying, the vapor from this mushroom can accumulate causing gyromitrin poisoning which can be fatal.


Knowing The Difference...


Luckily this one's pretty easy

Of all the species of false morel the Conifer False Morel is the most easily confused with species of true morel because of it's dark color.

I chose some close comparisons, but just so you aren't nervous the next time you go looking for morels here are some unmistakable specimens of True Morel:


Morel (Morchella Esculenta):


This delicacy sells for around 40$-60$ per pound at the Seattle Fish Market. They are mildly toxic when raw and should always be cooked.

Morels are one of the most prized and sought after specimens, usually holding the highest value in the market in spite of its mild toxicity while raw. I can't imagine why a person would need to limit themselves to boiling deadly vapors out of a potentially toxic false morel for a meal, there are plenty of other options! But there are still people who eat them. They are an interesting family of fungi to say the least. Thanks for reading everyone! Now you can go out and seek morels with confidence!

I went on a mushroom foray yesterday and am hoping that you can educate us on my finds.I posted all that I found, Please know that I will not be eating any of them as I am so scared of the wrong ones. The ones you have here today look so strange(like a brain) I have never came across any of them here in Florida.

I’ll check them out! Morels are sparse in Florida. They’re found most in the mid eastern states but Utah’s mushroom society finds them all the time!

I've never had one either! I've searched for them but they're tough to find in big cottonwood. Hopefully this weekend in the Uintas I'll see some cool new species! It's funny you should ask... I just barely talked to an old friend growing cordyceps mushrooms and he's gonna let me take a petri dish home to start my own batch! I hear they give a lot of strength and vitality, and are powerful immune boosters. Check out this quote from a random article I found, "The unique, amazing cordyceps mushroom made international headlines after Chinese runners broke two world records by unbelievably huge margins at the Asian Games in 1993. It seems the secret to their remarkable athletic performances was the so-called caterpillar fungus" Pretty cool right?

I had to take a look and yes that is amazing. It has great health benefits but only grows in the high altitudes. You are going to try to grow some of these famous mushrooms that look like caterpillars. I wish you luck with them. I think I may try to grow some of the store bought button mushrooms. I watched a few videos on it last night and it is going to be fun to try.

In terms of eating Gyromitra, at least in the US, it really isn't a good idea, even with parboiling or drying. The big problem is that no one has a clear understanding of what causes Gyromitrin levels to fluctuate in the various Gyromitra species. The result is that sometimes, in some places, like Finland for instance, Gyromitra is widely eaten by many people with apparently few side effects. However, here in the states the same cannot always be said, and there are numerous documented cases of Gyromitrin poisoning all over North America.

Boiling may not make things better for you if you happen to get a Gyromitra that has a lot of gyromitrin
The toxin easily evaporates out of the boiling water and it is possible to receive a poisonous dose simply by inhaling the vapors as the mushroom is boiled.

I've linked to a poison control pdf on gyromitra poisoning but the long and short of it is that whenever you eat one, or parboil one to prepare to eat it, you really are endangering yourself and potentially those around you.
