Orach is totally new to me @sagescrub. Would love to be able to grow it. Can they be dried and used in floral art arrangements?

Yes! Idyllwild dries the seed spikes when they are young and not fully formed and still very vibrant in color. The 2nd photo in this post would be way past the point where you would want to harvest for floral arrangements - with the seeds already being fully formed and fading. They need to be harvested when it is just barely past flowering but before the seed is fully formed. The timing is a little tricky because if the the seed forms fully they fall off easily. Idyllwild says yellow dock is similar (not in color but in form) and a little easier to time for drying for arrangements.
