Simply freezing is not enough....

Lots to learn. And a lot of the time the lessons are learned the hard way.

For example with freezing greens from the garden. It is not really enough to just wash them and cut them up. There are bacteria that can grow even in the freezer.

To make room in the freezer I cooked up some of the remaining greens from last fall. A few bags were left. Immediately I became very ill. Not stomach upset but like being poisoned. Nerves, joints and a general feeling of being poisoned. Very intense. Evidently there is something called listeria that can grow in frozen greens and can be fatal.

Fortunately if the heat is high enough in the cooking it will be killed. I'm a bit of dare devil. Once I had recuperated, it took almost two days... I took some more of the greens but this time heated them to very high heat.and there was no problem. I hate to throw foods away.

The way to safely freeze vegetables is to dip them briefly,,, three minutes... in boiling water and then immediately dip them in ice water another three minutes and then put into freezer bags.
