Fruitsandveggiesmonday had a garden day.
straight from the ground medley
Direct from the garden. Picked then shortly baked at 350 in evoo and coconut oil.
Started my day with usual picking of cucumbers and zucchini. Then went into broccoli and peppers. Grabbed a head of cabbage for coleslaw. Then the last of a row of green onion and radishes for the salad. Last I spent hours picking green n yellow beans. Grabbed a few ears of early corn and found summer squash at barn patch. One onion and red skin potato to round things nicer.
the cutting board looked pretty cool after.
I then roasted for 15 minutes before adding already roasted then chilled beets from garden a few days before.
came out well and so fresh had us only eating this mix for dinner.

Wow! What a great garden haul! We get dribs and drabs, but never that much at once so it is fun to see. You definitely can't beat a big bowl of freshly picked veggies. The epitome of the Monday challenge! And of course good fuel to make it through busy times ahead. :)
Can't beat a whole lot of veggies! I have a craving for a big bowl of steamed vegies with a bit of salt, that's it, nothing fancy. Drooling.
