Tall Sandwhich!
As most of you all know, I switched my diet to vegan whole food plant based diet. I have really been enjoying loving new foods I would have never tried before. When my husband (@skylineking88) told me about a contest he seen called #fruitsandveggiesmonday challenge, I knew I had to join. Not only to follow some other people recipes but to share my experience with others as well. Thank you @lanasveganliving for putting this on. I am excited to join.
This is my very first entry of many I am sure. This is a veggie sandwhich I made. We were getting tired of plain old salad so we improvised. Although not as healthy, the bread is vegan too! This sandwhich was soo good. Although it was hard to bite into, being so freaking huge! My kids actually loved it to. Super simple. I used the vegan bread in my post called Attempting Vegan Bread. Then I added some salad, broccoli, tomato, onions, zucchini, carrots, some veganaise and a little bit of sweet thai sauce! Was super yummy and colourful.

I'm super excited to start following a fellow vegan! I am always looking for new recipes to try, especially simple ones, because vegan recipes tend to be an all day thing lol. I never would have thought to put sweet thai sauce on a sandwich, can't wait to try this!
