Fruits and Veggies Monday

Hello lovely vegan foodies.

In my journey in Steemit, one i enjoyed the most is entering in a contest, like this wonderful #fruitsandveggiesmonday, not to mention It's also one way to earn SBD. It inspires me a lot about learning new dishes, being healthy, and so much to learn about. Sometimes, those ingredients i have never heard of, and leaved me to research in the internet.

Please allow me to share the photos of my entries in cooking, most of this are salads, just because i love salads. Its a part of my daily diet, and its soo good. Also, some of this is our typical fruits you can find everyday in our house, unless it runs out : )

I always make a bowl of fruit salad, Just delicious and perfect for a snack, breakfast, or to eat before a meal

I don't do this often, but when i do, It gets finish within few minutes. This crispy and delicious Spinach with chickpea flour batter, consist of grated onion and cumin powder is just excellent appetizer, best to accompaniment of tomato sauce or just ketchup, Yum !

This one is my entry to #medicinal-cooking by @eco-alex. It's a GUACAMOLE ! .... It was my first time to make this delicious mexican dip and was not surprise why many loves it, Its awesome and so quick to make. it really goes delish with crackers, nachos, or tortillos.

Another entry for medicinal-cooking challenge is, GRILLED PEPPER. You will be surprise how delicious capsicum when grilled. Its light, peppery, and sweet. Grilling pepper is an absolute delicious way to eat it.

Please bear with me for another picture entry, and this time its my MIXED BEANS SALAD, This is such a protein packed salad. Its super easy to make, you can use tinned beans or fresh one's but make sure to soak it overnight. One tip here is, the longer it soaks , the quicker it cooks. soaking should be done for at least 8 hour to avoid toxicity of the red kidney beans. This type of salad is ideal for athletes people, or for people whose work uses lots of muscles.

And more greens, I called this WATERCRESS SALAD, its refreshing and crunchy with a peppery taste from the watercress. This salad is full of antioxidants, vitamins, and high in calcium content. The dressings used here is extra virgin olive oil, lime, salt and pepper. what could be easier than that ?

Another dish that is common in Asian table is The Fried Rice. This mainly are the leftover rice, making it pimp by adding a bit of veggies like carrots, cabbage, green peas, or any vegetable available in your fridge.

Eating good food must be easy. a proper balanced diet is a key to achieve optimum health that our body needs. A planning, patience and right approach towards food can benefits you a lot with your mind, body, and soul.

Wow, you got loads of delicious meals in here! I especially like the fresh fruit salad (I just adore pineapple) and the guacamole you've made. Avocado is a daily must-have in my green dinner salads, makes just everything so creamy and rich in taste ☺️

Thank you @rawadventuress, I love fresh fruit salad too, especially tropical fruit salad. avocado goes really well with mostly anything raw, just amazing!
