Fruits & Veggies Monday/fried Vegetables with King Oyster Mushrooms ๐ฅฌ ๐ฅฆ ๐ ๐

Are you a fan of Thai cuisine? Then you definitely have to try this stirfry with king oystermushrooms!
The thailรคndische kitchen and their Rezepte are a mix from chinesischer, indischer kitchen and were through the history also through Europe effects.
Thai recipes are very aromatic in taste - each region has its own national dishes. From goulash-like meat dishes to chili dishes or even recipes with coconut milk are very popular.
Ingredients for 2 servings
for the vegetable pan
- Peel 300 g of potatoes, cut in half lengthways and cut into 1 cm wide pieces
- 200 g King Oyster Mushrooms - cut into bite-sized slices
- 120 g brown rice - rinse thoroughly
- 100 g green beans - cut into 4 cm long pieces
- 100 g baby corn - diagonally in thirds
Put the potatoes in a bowl of water so they do not turn brown.
Other ingredients and spices
- 350 ml of water
- 3 tablespoons of peanut oil
- 3 tablespoons tamari (soy sauce)
- 4 tablespoons of coarsely cut Thai basil
- salt and pepper
For the paste
- 100 ml of water
- 2-3 chili peppers - cut into rings with seeds
- 3 stalks of lemongrass -cut into rings
- 1 lime leaf - chopped small
- 8 g ginger - finely chopped
preparation
First, for the paste, put all the ingredients in a blender and finely puree.
Heat the peanut oil in a pan and sautรฉ the potatoes for about 3 minutes. Then add the beans and fry for 2 min. Then add the king Oyster Mushroomss and the baby corn and also roast for 2 minutes.
Put the paste in the pan, then rinse the blender jar with 350 ml of water and immediately deglaze the pan content.
Boil it up and stir in Tamari and Thai basil. Then reduce the heat and simmer for 8-10 minutes until the potatoes are tender.
Season with salt and pepper and serve with rice ๐
