Today I have something delicious and healthy for you with quinoa, maybe you like it!

Quinoa - a valuable source of energy

Quinoa is one of the so-called pseudocereals, which are botanically not part of the grain, but in their composition are very similar to the grain.

Already 6,000 years ago Quinoa served the indigenous people of the Andes as an important food source. The robust, undemanding plant can also be cultivated in those altitudes where there is no more cultivation of grain.

In Europe, only the seeds of the quinoa plant are used as food, in the original growing areas, the leaves are prepared as vegetables. Depending on the origin and variety, the seeds of the quinoa plant may be bright, red or very dark - I opted for a colorful mix

Quinoa contains particularly high-quality protein and many minerals. Compared to wheat, quinoa contains more fiber, calcium, magnesium, iron and has a better protein composition. In addition, quinoa is a good source of potassium. Since there are bitter-tasting saponins in the husk of the seeds, which affect the digestibility, the quinoa should be rinsed thoroughly under running, hot water before cooking.

Ingredients for a baking sheet of 20 x 30 cm

dough
  • 180 g spelled wholemeal flour
  • 50 g of margarine
  • 40 g dandelion blossom honey, made by yourself
  • 30 ml of water
  • ยฝ teaspoon cinnamon
  • 1 pinch of nutmeg
  • 1 pinch of clove powder

  • 60 g quinoa, colorful
  • 150 ml of water

  • 100 g hazelnuts
  • 100 g of dried fruits
  • 50 g of oatmeal
  • 50 g dandelion blossom honey
  • 100 g quince jam

Preparation dough

Knead all dough ingredients quickly to a smooth dough and let them rest for 20 minutes in the refrigerator.

For the topping Quinoa rinse in a strainer with hot water.
Bring the water to a boil, add quinoa, reduce heat and simmer for about 15 minutes.

Finely grate the hazelnuts and roast dry in a pan.

Chop the dried fruits small.

Mix quinoa with the remaining ingredients.

Roll out the dough thinly.

Coat the dough with the topping and bake in a preheated oven at 180 ยฐ C for 20 minutes.

Allow the cake to cool and cut into small pieces of squares.

These small power pieces are also good for longer storage, but they taste so delicious that it will not be necessary.
