Hello dear gourmets, this is my post for this Monday: Celery in curry cream sauce with pasta. Thank you very Much to @lenasveganliving and hosted by @plantstoplanks!

The celery (Apium graveolens var. Dulce), also known as perennial and bleaching celery, like her round relative, the celeriac, belongs to the family of the umbelliferae (Apiaceae). The perennial grows about 40 inches high and consists of many fleshy petioles. The leaves look like the celeriac and are slightly pinnate. Parsley, carrot and parsnip belong to the same plant family. The tasty fleshy petioles are bright green to intense green or yellowish depending on the variety. Celery, like celeriac, forms a root bulb, but it grows much smaller.

Celery can be eaten raw and cooked. Because it is particularly crisp, it is well suited as an ingredient in various salads or simply as a snack stick with a dipping sauce. Cooked, its flavor harmonizes especially in vegetable soups, stews or pasta sauces. The leaves can be used as seasoning in soups and sauces.

Because of its high water content, celery is a particularly low-calorie vegetable. It provides vitamins of the B group (including biotin and pantothenic acid) and vitamin A. It contains minerals including. Magnesium, calcium and potassium. Their typical aroma is created by the contained essential oils.

Ingredients for the celery sauce

  • 400 g celery
  • 300 ml vegetable broth
  • 2 tablespoons cornstarch
  • 100 ml cream vegan
  • 2 teaspoons curry powder
  • 1 tsp. Abrasion of an organic lemon
  • 1 1/2 teaspoon lemon juice
  • salt
  • pepper
  • 1 tsp turmeric

Preparation

Wash celery, clean. Peel off the hard threads on the outside. Remove the leaves and set aside. Divide celery into bite-sized pieces.

Celery in the vegetable stock on low heat Cook for 10 minutes. Strain broth and keep the celery warm.

Mix the cornstarch with a little cold water and stir into the boiling broth, switch off the heat and let the sauce soak for about 3 minutes.

Stir cream, curry, turmeric and lemon zest into the sauce with the whisk. Season with lemon juice, salt and pepper, add pieces of celery and celery leaves.

Since pasta is one of my favorite foods, I have also served this delicious celery sauce with pasta.

...and a few roasted tomatoes on top and you have a delicious meal!

I never used to like celery when I was younger, but I have come to appreciate it much more as I started getting into cooking. It is quite the versatile and healthy vegetable! There really are so many uses for it, but I love this idea to have it over top of some pasta in that delicious sauce! A bowl of pure goodness!
