Here in the southern hemisphere we are in the midst of summer and I am serving Chowder; you must think this gal has lost all her marbles!
But look what's happening outside - cold and rainy for the past four days, so what best to warm the cockles than a heart-healthy bowl of Corn & Oats Chowder!
All the bougainvillea flowers have fallen into the pool and on the paving; the garden is getting a thorough soaking plus the rainwater tanks we installed a couple of weeks ago are overflowing, and it's chilly!
Is this winter's last goodbye? The chill, not the rain, as summertime is our rainy season!

I wanted to make a quick soup and remembered seeing soup in my ancient Jungle Oats recipe book; yep from starters to mains to desserts - Oats is not just a breakfast dish but having a bowl of oats or muesli has many health benefits:

  • Blood pressure - Oats is high in Vitamins and minerals plus it contains powerful antioxidants such as avenanthramides which helps reducing blood pressure.
  • Cholesterol, Heart & Blood Sugar - The soluble fibre beta-glucan helps lowering cholesterol as well as blood sugar levels and promotes healthy gut bacteria.
  • Skin – Oatmeal is often used in beauty products and relieves eczema.

The old recipe book was the inspiration, but being an old hand I used what I thought would be a good combination of flavours, and it worked!

Corn & Oats Chowder

  • 3/4 cup Oats
  • Half Red Bell Pepper diced
  • Couple of baby Leeks diced
  • 2 small Potatoes grated
  • 1 Carrot grated
  • 1 cup Sweetcorn
  • Fresh garden herbs - Rosemary, Parsley & Comfrey chopped
  • 2 cups Vegetable Stock

Lightly toast Oats in pan with a little oil.
Add all veggies and sautee.
Add stock plus approx 1 litre hot water, simmer for approx half an hour.

Mash veggies slightly with a potato masher, check the seasoning and serve.
Short, sweet and simple but superlicious, satisfying and heart-healthy!

Oh love this idea. I always think of oats as more for sweet porridge but it makes perfect sense to thicken a soup xx

Mum used to make tomato and oat cakes which my sister really hated full stop it was probably a really 70s recipe but I must see if she still has it because I used to really like them xx

Well, here in Toronto is snowing if that makes you feel any better my Dear Lizelle, lol. That soup would be just perfect for lunch right now, yum! Nevertheless, I wish the weather will improve soon and you will have a beautiful summer 🌴😊🌴

Oh my that must be really cold, I'm not complaining, actually prefer this cooler weather we're having, soon it's going to be sweltering heat again! Thank you for your lovely comments Lena, hope you're not having too much pain and are recovering nicely:)

Today is a nice sunny day, but I am sure its freezing. There is a pile of snow there, lol. Always a pleasure my Dear Lizelle and thank you too. I don't really have pain after I take ibuprofen. But I should be okay within couple of weeks. Altough, to recover fully, it takes about one year. My right hand is not 100% healed since January.

The soup looks heavenly!
And the bougainvillea flowers stole my heart- such vibrant colors!

It was delicious thank you @goldendawne! The rain stole so many of the bougainvillea flowers, but there's still some left for us to enjoy, it makes such a nice show;)

Your chowder looks delicious and I am down with making some soon. We are ending fall and the snow started flying up here in NY. So this is going to hit the spot. I would rather be floating in your pool on a sunny day though. ;-)

We're really having crazy weather here, warnings of heavy rain and flooding which is normal for summer but not the cold! So this chowder was perfect but soon it will be salads again;) Thanks for popping in @sunscape!

It sometimes seems odd when someone is starting summer and we just finished it. We did get 8" of snow and more on the way. Your chowder would have been perfect last night.

Yum! I've never thought to use oats in a soup or chowder, but what a great idea! Makes perfect sense now that I see it. It is turning quite cold here these next few days, so I would happily cozy up to a bowl of this myself. A delicious entry this week!

I was pleasantly surprised with how nice the oats was in the soup, almost like barley! It was perfect for this unusual cold spell we're having, just too much rain at the moment which is worrying especially for the people living in informal settlements! Thanks for stopping by @plantstoplanks :)

Hope the nasty weather has past! That's especially tough when you don't have solid housing to protect you from the elements. There was some really wintry weather all over the US this week causing lots of highway accidents and other issues. Mother Nature shows no mercy sometimes!
