FRUITS & VEGGIES MONDAY by @lenasveganliving - The Purple Carrot.
Hi everyone i have been away for about 3 weeks visiting my mom and family in Australia so i haven't had much time to write up more condensed articles as i was having to much fun with family and friends but this week i am back to introduce to you the purple carrot.
Be honest with you i had never heard of or seen a purple carrot i came across this purple carrot when i took my mom shopping in a fruit market while i was in Australia so curiosity got the better of me and just had to buy one and take it home to do some research on to see how it became a purple carrot and it turned out to be that originally purple carrots were the norm.
Well that was a surprise of information the purple carrot been the norm , it wasn't genetically modified it wasn't made up from some mad scientist in a laboratory in fact they have been around longer then you or i have been.
When i first looked at this purple carrot i actually didn't expected it to be purple color all the way through but to my surprise it was and for it's flavor on tasting it was definitely sweeter then the orange carrots that we are use to and also not only do they contain vitamin A and beta-carotene of ordinary orange carrots, it's also rich in anthocyanins.
So next time your out there shopping for veggies and you spot purple carrots bring some home they go great with salads , eating them raw , roasting them cut up into purple carrot chips mixed with a bit of sea salt and olive oil or mixed into a spicy lime coleslaw or even simply roasted potatoes ,onions and purple carrots and that is just some uses for the yummy original purple carrot.

Purple carrots are used to prepare "şalgam drink" traditional drink in Turkey.. And this drink is always served with kebabs..

Purple carrots are so pretty in a salad! We don't buy them in the supermarkets here in SA but we have been able to find heirloom seed to plant
They are certainly yummy in salads and hopefully you got a garden full of them :)

Amazing aren't they was my first time see a purple carrot also i bought it back with me from Australia and landed in Bangkok Tuesday late evening and i didn't want to keep the carrot to next week i was excited to post it up because i had already missed 3 weeks of your contest.
