Hello my friends! It’s a holiday week around here and the foods always seem to be a bit richer don't they? And the best thing is that richer can still be healthy!!

Roasted Potato Salad with Spiced Avocado Dressing
Potato Salad has always been a staple at our family picnics and cookouts. I must admit though my earlier versions haven’t always been the healthiest! This year I have worked on modifying the recipe adding/subtracting to get the perfect taste while maintaining a healthy dish. I have always been a fan of avocado’s (who doesn’t like guacamole right?) so I have tried many variations to come up with the perfect avocado dressing for the potato salad.
I like a little zip and a little crunch with the salad so I hope you’ll like it!
You’ll need
Salad
- Organic small potatoes (chop in 3/4” pieces)
- 1 Zucchini
- 1 ½ cup chickpeas
- fresh Green Onions
- Olive Oil
- Salt/Pepper (to taste)
Dressing
- 1 Avocado
- 1 fresh Lime
- 3 tablespoons Olive Oil
- 1 clove of garlic
- 1 tablespoon Apple Cider Vinegar
- 2 tablespoons Sriracha Sauce
- 2 tablespoons water (as needed)
- Salt/Pepper (to taste)
- Tomato (garnish)
Preparation
- Preheat oven to 425 degrees
- Toss potatoes with olive oil, salt and pepper. Place in baking dish. Bake 15 minutes.
- Toss drained chickpeas and sliced zucchini with olive oil, salt and pepper. Add to potatoes at 15 minute mark and roast all for additional 15 minutes.
Now let’s make the dressing!
Place all dressing ingredients in your blender and blend until really smooth! You may need to add a bit more water if you prefer a thinner dressing. Totally up to you! Taste and add salt/pepper (more hot sauce?) to suit your taste!
Toss dressing with the potato salad.
And now you’re ready to go to the picnic! This salad is beautiful, served warm or cold.
Remember though, the avocado will begin to brown after a couple of hours…so eat up!

I never thought of using avocados for a potato salad. What an awesome idea. I also love that you roasted the potatoes. The flavor and texture would be even better than boiled ones.
Yes, yes it does work! Good flavor and texture. The only downside is the fact that the avo does discolor as you well know. Although, in this case....it was long gone before that :) I hope you'll try and let me know! Thank you!
