Vegetable 'Cottage' Pie - Hearty Autumn/Winter Food
My partner Som is a meat eater and I am a vegetarian so each times he makes himself a Cottage Pie he makes me this using with a variety of vegetables that we have in our weekly organic plastic free veg box.
Sometimes be makes himself a Shepherds Pie which is the same but with Lamb instead of Beef.
This week my Vegetable Cottage Pie contains Red Cabbage, Kale, Sweet Potato, Carrots, Squash, Parsnips, Red Onion, Leeks. As well as Vegetable Stock and seasoning.
To top the pie is a 3 potato mash! Mmmm. Potato!
We will eat this with some onion gravy and some bread and butter too!

Oo that sounds really tasty! I always find lentils a bit hit and miss must give this ago though. Love sweet potatoes too!
