Cilantro lime Cauli-Rice Tacos w/ Braised Brussels: Fruits and Veggies Monday

Hi friends!

Life is getting pretty hectic over here at the puravidaville abode. Dandays and I are running around like chickens trying to tie up all loose ends before our departure. I apologize for missing fruits and veggies Monday last week, @lenasveganliving I’ll try not to let that happen again 😉.

Along with a crazy schedule, I have also been adhering to an extremely restrictive diet due to some digestive issues so my usual holiday baking, candy making and cooking has seized to exist. No worries though, I still have a Fruits and Veggies contender that was inspired loosely by my friend @birdsinparadise post.

Check out my Sunday night off the cuff creation. Y’all know what I’m talking about when you haven’t been to the grocery store in a few days and you’re not sure what to make… then magic happens :

Cilantro Lime Cauli-Rice Tacos w/ Braised Brussels

First, I started out with the idea to braise some brussel sprouts. Shortly after, I figured I could make some fun concoction with cauliflower rice, cilantro and whatever else I had in my fridge. Then, I remembered the left over black beans and knew I had tortillas… ::light bulb:: … poof! It’s sunday night off the cuff tacos.

My start up was kind of like this but it grew as I got to cooking.

Start by preheating your oven to 450F and cut your Brussels in half. I also clean up the dirty outer leaves.

Drizzle a little olive fizzle (oil), a healthy dose of apple cider vinegar and season with pink Himalayan salt, pepper, and chopped red onion.

Cover with foil and bake for 15 minutes. Use this time to start chopping the onions for the cauli-rice.

This is what your cauli-rice start up might look like. See those jalapeños, @plantstoplanks might act like she doesn’t like the heat but I beg to differ :)

Of course the first step is sautéing the onions in a little olive oil… isn’t it always 🤷🏼‍♀️ ?!

While those are getting soft prepare your spices and other ingredients that need chopping.

What we have here is Himalayan pink salt, Greek oregano, cumin and basil. I adjusted my spices as I continued to cook so just use however much tickles your fancy. (Did she just say tickles your fancy?)…

When your husband, housemate or friend calls out “it smells good in here” that means the onions are good and it’s time to add the cauli-rice. Keep the flame on medium heat and try to break up as much frozen rice as possible.

In preparation, chop about this much or more cilantro, and cut lime wedges from two limes.

Pull your Brussels from the oven, uncover the foil and stir them. Then pop em back in the oven uncovered for another 15 minutes.

Add your chopped garlic and spices to the rice. I think I used 4 garlic cloves but I like garlic… a lot. Mix and cook for a minute or two.

Now toss in your cilantro and any more spices you desire. Don’t forget to squeeze those lime wedges in there too. I know some of you have lemon/lime juicers (show offs) so go ahead and use that instead.

Finish the rice off with some chopped jalapeño and cook everything for an additional 5 minutes.

Pull your left over black beans (made from scratch) out of the fridge and heat em up in your super healthy, no radiation contributing, micro device while you heat some tortillas.

And then sit back and watch your husband drool over what you just whipped up.

Looks great @puraviaville, thanks for reminding me I should make some brussels sprouts myself more now that it's getting colder. I absolutely love them despite disliking them when I was a kid.

You know Brussels get a bad wrap. When prepared correctly they are actually quite delicious. The best is a balsamic, honey glazed brussel 😋.

Digestive issues really suck, I also have them every now and then. One time I was able to eat nothing but oats and probiotic yogurt for 5 days... I hope your guts start to feel better soon! However, this seems like a great dinner, all the flavors must go really well together, and tacos are always a good idea! :)

I know it, tacos are great with anything. Haha… yeah, this does suck. I can’t eat any sugar in any form, no starchy veggies, no gluten, no fruit, no caffeine, no fun with a capital F. Basically I’m reduced to veggies only and some raw nuts like almonds. Hopefully it’s not for too long 🤞. It’s pretty difficult to read all of the fruits and veggies posts without getting massive cravings. Eeekkkkk 🥶

Now I'm hungry seeing all that food. Here in Brazil is kind difficult to find Brussels, unfortunately. I like it tastes, is different and could be harmonized with different tastes.

I’ll send a plate your way ASAP. I probably take for the granted the fact that we can have brussel sprouts in the US any time we want. My husband and I are moving to Central America where we are about to find out what it means to eat fruits and veggies in season. It should be a really great time :). You will experience the real flavor of fruits. Here, we have our veggies and fruits of season which I could eat in Canada. However, the taste is totally different. You will love it.

Tacos--definitely not just for Tuesdays. 🌮 Magic really can happen with the dribs and drabs left in the refrigerator! I would totally be drooling over a plate of this veggie goodness if I were in the Days household myself. I don't have one of those fancy lemon squeezers either, so I just use these long fingers of mine to squeeze the heck out of that juicy citrus. Because lemon and lime just make everything pop!

I was hoping to be making some more holiday goodies, but my goodness where has the time gone? I do have some blue balls on the docket because that is a holiday tradition 3 years running. Why? Because energy balls made out of dates, blueberries, nuts and lemon are not only delicious but it is pretty darn funny to get all my co-workers to make jokes about balls for days. 🤣

That name is classic! If I were making candy this year blue balls would definitely be on the menu. Haha

The lemon/lime juicers are good at catching all of the seeds from a lemon. Behind the bar I’m fully equipped with these things but once I get home I’m working with the bare essentials. You don’t know how excited I am to get a food processor. It’s kind of ridiculous- this is how I know I’m an adult!

Thank God for fruits and veggies peeps, they give me a ton of inspiration.

I asked for a new toaster oven for Christmas. And a few years ago I was totally pumped to get a small chest freezer for extra space to store my cooked beans and other vegan viddles. At least we know how to adult hard in the kitchen, haha!

You did it! Ding, ding ....my ultimate favorite fantastic vegetable...brussel sprouts!!!! Or as I told my daughters when they were little....dinosaur food! They were sure to love them at that rate! I usually have things to make either salsa or guacamole so cilantro is in our fridge often. Although, I do wish I could buy it in smaller bunches 🤷🏼‍♀️ Thank you for stopping in @lenasveganliving. If I can make you smile/laugh then I succeeded.

You always do Sweetie, lol. And you are so right about that cilantro; I wish I could grow my own! However, if you place it in the glass with water and cover it with a plastic bag it will last longer in the fridge.

Good pointer. I wish I could grow my own too. In fact I want to grow all of the herbs, cilantro, basil, mint, maybe some thyme. I can’t wait, and I’ll try that water trick 😉

I used to grow them all when I was living in a townhouse. oh well!

Dandays wants us to grow them straight from our kitchen window inside. I think that sounds like a great idea but I would rather have a full blown garden outside.

Riced cauliflower?!!! You get the best food ingredients there @puravidaville! I love brussel sprouts. Yay for featuring them! Not too many people like them. Can I make a digestive tip? Not knowing anything about your colon health I can assure you that two things will help for ANY digestive concern. Aloe juice (although I think you may be taking it) and digestive enzymes. Digestive enzymes are amazing! You tummy will thank you! Pop one or two with every meal

I know, I’m actually quite excited to be moving to a place where I’ll most likely be restricted to what’s in season. I actually don’t take aloe Vera juice anymore. When I was much younger I’d take it for my pancreas and I think it did a lot of good for me. Thanks for the reminder. Instead of digestive enzymes I take Swedish bitters (alcohol free). They help but are quite difficult to take with me everywhere as they need refrigeration. I’ll look back into the aloe though, that always agreed with with my system.
