THE BATMAN IN THE KITCHEN...NIGERIAN POTATO POTAGE (ASARO) WITH ZOBO (A native northern Nigeria wine)

The kitchen has always been one of my favorite place in the house. I couldn't handle the fact that I bought potatoes yesterday as stated in my last post and today I couldn't help myself staying away from the beautiful appearance of the glorious sweet potatoes.

Today, I will be talking about how I prepared the most common Potato Potage in Nigeria. Many Nigerians will call it ASARO and I myself will like to call it ASARO.

Okay, I can't see the difference.

IT'S TIME TO COOK

Ingredients;

  • Potatoes
  • Palm kernel oil (Red oil)
  • Smoked fish
  • Scent leaves
  • Seasonings (Maggi, salt pepper)
  • Water.

  • Directions;

    • Pill outermost layer of Potato and slice Potato of desired sizes into a bowl containing water

    • Rinse the sliced Potatos very well and fetch slices into cooking pot. Light up your cooker and place the pot on cooker and add water of almost the same level to the Potatoes. Cook until Potato start gettin

    • Add salt to the boiling Potatoes and stir.

    • Add the palm kernel oil to the Potato and boil further for a few minutes.

    Seasoning time;

    After a few minutes of boiling the Potatoes, drop the pot containing the Potatoes from the fire and use a turning stick as we call it to mash the Potatoes.

    • Add the squished smoked fish, desired cubes of Maggi seasoning and scent leaves to the Potato Potage and stir.

    Cook for a few minutes and serve.

This recipe of yours - potato porridge, is nutrient dense. Ordinarily, potatos are a good source of magnesium. Besides, scent leaves/ basil leaves gives the meal additional boost of magnesium coupled with vitamin k. These all help for better calcium absorption protecting your bone health & immune system.
If only Nigerians realized how important zobo is to their cardiovascular health, there would be less hypertension in the population. Just eat your potato porridge. About 30 mins later drink your zobo. Two hours after go to bed and sleep. You'll wake up very refreshed to face the challenges of a new day.
