5 Minute Freewrite - Pasta
Although Tex-Mex food is my favorite, I do like Italian food also, especially the pasta parts. In particular I like spaghetti. I don't know why I like it more than the others, although lasagna is a close second. I think maybe it's because of the way my wife makes her spaghetti sauce. That must be it. I can't tell you exactly everything she puts in it, but whatever it is, it's delicious. Even her Filipino relatives that are use to the sweet Filipino style sauce, like hers better. That's saying something. In fact, I do not know anyone that does not like her sauce. She can make it spicy, which is how I like it, but usually she makes it so that everyone can eat it.
Even if she puts the sauce on other types of pasta, for some reason, to me, it doesn't taste the same. Maybe that's just my imagination, and I sure do have one of those. I know that she puts onions and garlic in her sauce, but I suppose that most people do that. She also likes to use a canned sauce and add to it. That doesn't seem like it should work, but it does.

I love spaghetti but only home made. My recipe is Italian with a dash of cajun. I put cajun spices in mine which gives it a little spice and a unique flavor.
I love spaghetti and always have. When I was a teenager going through a growth spurt and playing high school sports at the same time, I would build up a tremendous appetite. One day I came home from a late Basketball practice and everyone else had already had dinner. Mom had left a huge pot of spaghetti sitting on the kitchen table and a place setting for me. I immediately dug in filling my plate with lovely pasta and pieces of still warm buttered French bread. I don't know how long it took me, but when my Mom came in to check on me that entire pot of spaghetti and all of the bread had disappeared down into my bottomless pit.
When I saw the look on her face I felt really bad, I suddenly realized that she had meant for that to be for two meals and she had planned on making a casserole out of the leftovers for the next evening meal. We were a poor family living on a small farm in rural Alabama and she always stretched meals as far as she could, if our dogs and cats couldn't hunt for themselves they were likely to starve because there were not many leftovers at our house to be thrown out. My poor Mother, she couldn't believe that her biggest pot that was nearly full of pasta could have possibly have fit into my 120 lbs body.
My parents had the same problem with me. Unfortunately, I never got out of the eating too much habit. I'm not almost 60 and still eat a lot.
