The definitive lentil stew
Soak one cup of lentils overnight
These will rise and be ready to boil for your lunch. Rinse and then add fresh water.
Cook for half an hour or until soft.
In a seperate pan cook 3 peeled potatoes cut into eighths. Boil in water for 20 mins, drain and set aside.
Fry one onion, 2 cloves of garlic and a splash of olive oil
Add one organic vegetable stock cube, mash and fry with one ripe tomato chopped
Add a torn whole bay leaf, pinch of black pepper. Once all blended and smooth add the lentils, potato, a handful of garden peas and a cup of spring water. Simmer with lid on for 10 mins and then serve.
