WHITE SOUP/OFE-NSALA
This is a very tasty, easy to prepare and rich soup, common to eastern Nigerians.
This soup can be prepared in Many ways, depending on how rich you want it to be. Also many tribes have their unique ways of preparing it, and also unique condiments they add to it, but basically; it is a soup prepared with no leaves, the leaves are the "many obstacles" that obstruct the stirring of the soup.
HOW TO PREPARE
INGREDIENTS:
DRY FISH
Stock fish
Catfish (fresh fish)
Meat
Maggi
Salt
Pepper
Thickener( yam powder, brachystechia
urycoma(achi seeds))
.there are other secondary ingredients, that can add spice to the meal, some are relative to some localities. Examples of such ingredients are;
very little of gongronema latifolium(or utasi)
onions
PROCEDURES TO PREPARE
Boil your meat and fish properly,
Add salt,( depending on the size of your soup)
Cube/cubes of Maggie (depending on the size of your soup)
Pepper
And any other ingredient,
Then add your thickner to the boiling mixture, and stirr to make sure a proper solution is formed.
Then allow to cook for some time. And your soup is ready!!!
NOTE: the above method is my method,and can be faulted on many grounds.
This is one of many delicacies the Nigerian people have to offer, sometimes it's looks might be deceiving, due to the absence of oil but it's a soup that is so rich in protein, and is so easy to prepare, and of course tastes so nice.
So anytime you go close to that area, endeavour to taste it, and trust me, you won't be disappointed.
