Bibimbap (Korean mixed rice)

It’s a very popular Korean dish and is delicious with colorful vegetables, meat, eggs and some gochujang 😋

Some of you might know or are familiar with Bibimbap. If someone wants to try to make it, below is information for your reference. Hope you like it and enjoy it.

INGREDIENTS AND PREPARING

RICE:
3 cups short-grain rice/ purple rice

BEEF:
1 pound beef, cut to 2-3 inch long thin strips (ribeye steak, flank steak, sirloin, or chunks)
1 tbsp cooking wine
1 tbsp soy sauce
1 tbsp sugar
1 tbsp sesame oil
1 tsp (2-3 cloves) garlic - minced
1/2 tsp black pepper

VEGETABLES and OTHER INGREDIENTS:
1 English Cucumber - washed and cut into half moons/fine Julienne
2 Green Onions - washed and chopped
12 oz Soy Bean Sprouts - washed
12 oz Spinach (1 large bunch) - washed
6 oz Woodear Mushrooms - washed and boiled for few minutes, thinly cut
6-8 Shiitake Mushrooms - washed, thinly sliced
1 large Carrot - washed and cut fine julienne
8 cloves fresh minced Garlic
1/2 medium size Onion, thinly sliced
Vegetable Oil
Sesame Oil
Toasted Sesame Seed
Sugar
Salt
Oyster Sauce
Egg
Korean Hot Pepper paste/Gochujang (optional)

EGG OMELET:
3-4 large eggs, lightly beaten and with 1/8 tsp / sprinkle some salt

INSTRUCTION

  1. RICE: Rinse/wash 3 cups of rice 2-3 times, drain the water and add 3 cups of water. Cook for 30 minutes or cook with your rice cooker as usual.
  2. BEEF: Use a medium size bowl to marinate the beef. Add all the following ingredients (1 tbsp cooking wine, 1 tbsp soy sauce, 1 tbsp sugar, 1 tbsp sesame oil, 1 tsp minced garlic, 1/2 tsp black pepper) and mix it all together. Cover and put in the fridge for half an hour or until need it. Prepared all the below ingredients (see #3 to #9), then stir fry the beef.
  3. ENGLISH CUCUMBER: place on a bowl, add 1/2 tsp minced garlic, 1/4 tsp salt, 1 tsp sesame oil and sprinkle on some toasted sesame seed about 1/2 tbsp. Mix them and place on a big platter/a bowl.
  4. SOY BEAN SPROUTS: Boil a pot of water and add cooked soy bean sprouts for 10-15 minutes with a little over medium high heat. Remove from heat, drain it and let it cool. Place in a bowl, mix the soy bean sprouts with 1/4 tsp salt, 1 tsp minced garlic, 1 tsp sesame oil and 1/2 tbsp toasted sesame seed. Then, mix them and place on the same big platter/a bowl.
  5. SPINACH: Use the same pot with new boiling water, put in the spinach and let it blanch for about 30 seconds, not too long. Remove from heat and rinse with cold water/soak with ice water. Gently squeeze out water from spinach. Put in a bowl, add a pinch of salt, 1tsp minced garlic and 1 tsp sesame oil. Then, mix them and places on the same big platter/a bowl.
  6. EGG OMELET: With a large pan and medium low heat, add 1 tsp of cooking oil and add beaten eggs to the pan covering the pan’s surface. Cook for 2-3 minutes, then flip over and cook for another minute. Slip omelet to a cutting board and let it cool, then cut it into fine slices or the size you want
  7. CARROT: Use the same pan with over medium high heat, add 1tsp cooking oil and a pinch of salt, sauté the carrot for 3 minutes, put it in the same big platter/ a bowl.
    8)WOODEAR MUSHROOMS: heat up a pan with medium high heat, add 1 tsp cooking oil and sauté it for 3 minutes, then add 1/2 tsp sesame oil and pinch of salt. Mix them and place on the big platter/a bowl.
  8. SHIITAKE MUSHROOMS: The same pan, add 1 tsp cooking oil, add mushrooms and stir fry for 3-5 minutes with 1 tsp oyster sauce. Remove from pan, add 1/2 tsp sesame oil and sprinkle some sesame seed.
  9. Lastly, with the same pan, increase to high heat, add 1 tsp cooking oil, some minced garlic and sliced onion to saute about a minute. Then add the marinated beef and stir fry for 7-10 minutes or until it is cooked.

PREPARATIONS TO SERVE
~Put some rice on the bowl and arrange the vegetables and beef on top of the rice. For the vegetables, try to arrange different colors next to each other.
~Make a sunny side up egg and place in the middle on the rice bowl.
~Add Korean hot pepper paste/gochujang on the side (optional).
~Sprinkle toasted sesame seed and chopped onion.
~Already to serve and enjoy the Bibimbap!

**If you don't have time to prepare all the ingredients, you can use only a few ingredients with a sunny side up egg and some stir fry meat, it will still be tasty.

**There is another option that you can make it simple and quick, you can sauté or stir fry a few vegetables together, and add a sunny side up egg and meat instead.
