One of my favorite food of all time has to be fresh uni (sea urchin), that fresh, creamy and slightly salty taste is just unbeatable.
新鮮的海膽是其中一個我最喜歡的食物之一：新鮮和微鹹的味道是無與倫比的。

There are different quality grades assigned to uni:
以下是分配給海膽質量的不同等級：

• Grade A has bright yellow/gold with a firm texture;
  具有明亮的黃色/金色，質地牢固;
• Grade B has darker yellow and has a softer texture and less sweet;
  有更深的黃色，質地更柔軟，甜度更低
• Grade C are those being broken during processing.
