Pierna de corzo con boletus-Roe deer with boletus

La carne de corzo es un gran manjar que va bien con una larga lista de ingredientes, por eso hay varios y sabrosos platos en los que ésta carne es el ingrediente principal, uno de esos platos es el que os dejo aqui hoy.
Roe deer meat is a great delicacy that goes well with a long list of ingredients, that's why there are several tasty dishes in which this meat is the main ingredient, one of those dishes is what I leave here today.

Ingredientes para 4 personas-Ingredients for 4 people

1 kg. de carne de corzo-1 kg. of roe deer meat

500 grs. de boletus-500 grs. of boletus

1 cabeza de ajo-1 head of garlic

1 cebolla-1 onion

1 puerro-1 Leek

Sal-Salt

Pimienta-Pepper

Aceite-Oil

Harina-Flour

Vino blanco-White wine

½ taza de brandy-½ cup of brandy

3 L. de caldo de cocido o agua-3 L. of cooked broth or water

Elaboración-Elaboration:

-Trocear el corzo en dados y salpimentar.

-Pasarlo por harina, freírlo y flambearlo con el brandy

-Añadir todas las verduras enteras, ya limpias, el vino y el caldo y dejar cocer 2 horas.

-Ponerlo a punto de sal y cuando veamos que la carne esta blanda añadimos los boletus troceados y dejamos cocer 15 minutos. ¡Listo!¡A disfrutar!

-Cut the deer in dice and salt pepper.

-Pass it through flour, fry it and flambé it with the brandy

-Add all the whole vegetables, already clean, the wine and the broth and let cook 2 hours.

-Put it to the point of salt and when we see that the meat is soft add the sliced boletus and let cook 15 minutes. Ready! Enjoy!

Es una carne con menor contenido en grasa saturada y calorías, y con un importante aporte de proteínas.La carne de corzo es rica en hierro y fósforo, y contiene además importantes cantidades de magnesio y potasio.En cuanto al boletus,es un alimento bajo en sodio y rico en potasio y fósforo. Tiene vitaminas del grupo B y vitamina C.
