One of my all-time favorite Filipino dishes is the Pancit Palabok. Pancit Palabok is noodles cooked in shrimp sauce with toppings that vary from pork rinds or chicharon to hard-boiled eggs, or whatever you can find in your pantry.

Hindi uso samin ang palabok. Bihon at Pancit lang uso. Pero mas hilig namin kainin root crops. Hindi kami nawawalan ng camote :-D
