Boiling the pork belly in ginger slice is a Chinese cooking secret recipe... we do that all the time T home but not for 30 mins.. it’s more of to remove the residue or sediments.

If you boil too long, the meat gets hard especially if you’re going to stir fry it later.

Thank you for your comments @ireenchew! I was just going by the recipe for the boiling time. It came out very tender.
