[Recipe] Famous Skewers from Bali, Sate Lilit

Spicy, juicy and tender. Sate Lilit is a most popular satay in Bali. In this recipe we use chicken meat as ingredients, although there is also sate lilit from white-meat-fish.

Barbecue season is in progress and there is no signs that it's being end soon ... The weather here in North Germany is great.... every day, here is only sun and warm with no limit. We have about 30°C everyday.

To make our evening-barbecue with friends and family be more varied, I would like to publish a barbecue recipe from Bali, Sate Lilit. It is a very well-known sate skewers from Bali. If you have been to Bali, you will surely know this satay. They are usually sold by an old lady on roadside or in evening market.

This recipe is a simplification of original recipe, which we use spice powder here. The original recipe uses fresh herbs and spices.

I made with 500 grams of chicken meat and it will be 18 skewers of Sate Lilit.

Let's prepare.....

Ingredients:

  • 500 gr minced chicken meat
  • 5 tbsp grated coconut
  • 3 tbsp cooking oil
  • 50 ml of water
  • Bamboo Sate skewers

Spices:

  • 3 tablespoons of roasted onions
  • 3 cloves of garlic
  • 1 tsp turmeric ground
  • 1 teaspoon galangal ground
  • 1 teaspoon ginger ground
  • 1 teaspoon pepper ground
  • 1.5 tsp coriander seeds ground
  • 0.5 teaspoon lemongrass ground
  • 2 teaspoons salt
  • 1 tsp of sugar

Preparation:

  1. Put minced chicken meat in a large bowl, then add grated coconut, salt and sugar. Crush roasted onions in a mortar and add to the minced meat.
  2. Stirr these spices together: turmeric, galangal, ginger, coriander and lemon grass to 50 ml of water. Crush garlic cloves. Fry all together with 3 tablespoons of oil at low heat until the liquid is steamed or it be a creamy consistency, and then add to the minced meat.
  3. Then stirr well with your hands, taste it, Season with salt if needed. Be careful, the yellow color of turmeric is difficult to remove. Wear gloves.
  4. Take a handful of meats and form it as a long round, then stab to a bamboo skewer, repeat until all is done.
  5. Sate then grill until they are cooked (light brown). In winter you can bake that too.
