Creamy Coconut Taro crab delight just for you!
"You dont need a silver fork to eat good food",says PaulPrudhomee. While "hardwork should be rewarded by good food "said Ken Follett.
Currently imagining the sumptous foods my mom @wildcollector makes in her humble kitchen. Its her home cooked foods I wish to partake when I am in my hometown especially that I know they are pesticide free as most of the ingredients are grown from our farm.
One of the food I am envisioning now is this taru leaves we call "gabi " which means night in other locality simmered in thick creamy coconut with large ,fatty crabs to make you want to forget your diet.
"No one is is born a great chef ,one learns by doing "says Julia Child.
So how do you cook this simple yet tasty meal?In my last visit to my hometown ,my mom again deminstrated it for me .So for the ingredients we harvested all from our farm except for the blue crabs or "masag"as we call it .Can you guess what ingredients we used ?
If you guess crabs, coconut meat, lemongrass, basil ,turmeric and taru leaves then let me guess youre either a great chef or a homestead grower. So ,you just simmer them all with salt, pepper ,ginger and other spices and viola.
The struggle would be the proportions and how to prepare the taru leaves. My mom did it and i have yet to do the dish without her supervision. Here are some snippets of here doing her forte.
"A recipe has no soul .You as the cook must bring
soul to the recipe" Thomas Keller.
Sure many others know how to cook this but I love my mom's recipe the best as it carries so much heart in it.It doesnt use those commercial premixed seasoning in cobsideration of my kidney problems and dad's heart ailment for one .Two,its not done in rush and its quality speaks for itself .Three ,its a family heirloom recipe carried over generations.Indeed Ina Garten was right in saying "Cooking is one of the great gift you can give to those you love "
Because we had a day's work in the farm we decided to have some tea of oregano -honey and some local sticky rice we call "suman" and some fresh mangoes when we got back home
I am so fond of my home cooking as well as the organic farm that makes most of its ingredients as these are priceless memories of me with my aging parents.Organic produce are palatable, cheaper and healthier than ones you buy in the stores .Im glad I get to enjoy both.
To close allow me to borrow the words of Craig Claiborne"Cooking is at once a child's play and adults joy.And cooking done with care is an act of love ".I hope you have recipes in your head to get through a bad day.We all need that.
Till next post,
Ayn
