Wednesday is always my baking day as I have to take something sweet to my children's swimming session. I normally bake a cake but recently i've cut down on sugar so scones are a good option. I prefer plain scones with a big dollop of raspberry jam and clotted cream but that wouldn't fit into my regime so i've done some fruit scones today which will be spread with salted butter instead. Almost as delicious.
I've discovered to best way to make scones is to handle them as little as possible and as soon as the dough comes together press it down lightly and cut immediately. I use Delia's recipe as it's very simple but I always brush with plenty of egg before they are baked.
