"Lockdown Pasta" - Pasta with Sardines

In this state of enforced isolation, we surely miss our normal life. We miss going to the mall and go shopping, eat in restaurants. Yesterday, I’m in the mood again to cook especially that my husband is in the house. Pasta is my favorite. So I assessed the pantry. Sadly, I found no spaghetti or any pasta sauce available. But fortunately, I noticed that we have abundant supply of sardines- the famous food during this quarantine period.

That explains my recipe for today.

INGREDIENTS

500 grams round pasta
2 cans of sardines, particularly spanish style (separate the oil from the fish. chopped the sardines into chunks)
1 cup bread crumbs
1 tbsp olive oil
2 tbsp minced garlic
1 medium red onion
1 red tomato sliced

PROCEDURE

  • Boil the pasta until firm or according to the instructions. Drain.

  • For the crunchy toppings, heat olive oil in pan ang sautee half of the minced garlic. Then add the bread crumbs. Cook on medium heat until golden brown. Season with salt and pepper. Drain on kitchen paper and set aside.

  • For the flavorful sauce, in the same pan using the oil of the sardines, sautee garlic, onion, & tomato until soft.

  • Add the sardines. Season with a pinch of salt. Simmer for 2 minutes
  • Combine the cooked pasta into the sauce.
  • Serve in a nice plate, topped with the crunchy bread crumbs, and put a lemon wedge on the side.

I cooked this for the second time already during this lockdown. It would be better if there’s oregano. Anyway, I just used what’s available. This dish is healthy because it is rich in calcium, protein, & omega-3. Enjoy and happy eating!
