How to make homemade pies

The dough for homemade pies is a quick and working, delicious recipe. For 20 pies, dough weight for each 40 g. To make the dough come up, leave it in the turned off oven with a bowl of boiling water.

Ingredients:


  • 200 g milk
  • 20 g eggs (half of one mixed)
  • 25 g sugar
  • 4 g dry yeast (if open for a long time, take 5 g)
  • 75 g butter (I take 50/50 butter and vegetable)
  • 330-350 g flour
  • 3 g salt


    Add sugar and half an egg mixed with a fork to warm milk (the other half will be used to anoint the pies before baking). Stir with a fork and add dry yeast. Let them stand for 15 minutes, they should become active - foam will appear. Stir in flour. Do not add everything at once - my dough took 330 g. Add salt to the flour.

Leave the dough in a bowl under the plastic wrap in a warm place for about one hour to come up. Such a place can be a switched off microwave oven with a cup of boiling water, or you can do the same in the switched off oven. Take a look at the dough - if it came faster, proceed to the next step.

Heat the butter and oil separately in a saucepan until the mixture is pleasantly warm. Stir the butter into the dough while still in a bowl, then stir well with your hands on the table. Return to a wrapped bowl for another 30 minutes in a warm place.

When the dough was ready, I divided it into 20 pieces of 40 g. You can do it just by eye.

Roll the dough "balls" by spreading them out with your palm. Place the filling on top. I did it simply: boiled crushed potatoes, onions fried in butter, salt, black pepper. Shape the products. Leave to stand for 40 minutes in a warm place or under a towel.

Brush with the remaining egg. Bake at 200 degrees for 9 minutes. Watch the temperature - each oven works a little differently, you may need a little higher. And I also recommend sprinkling the pies with water before baking, or put a frying pan with boiling water on the bottom of the oven.
