RECIPE - The lentil curry

The lentil curry

Today I'm gonna share with you one of my specialities: the lentil curry. You bet is one of the best and simplest things you'll EVER eat, so grab your pots and pans and get ready!

This recipe is VERY simple, and you can change most of the ingredients. For clarity, i'll write in bold the ingredients you definitely need to use. All the rest just do whatever you want and have fun 😊

Ingredients

  • 1 cup lentils - if you remember to, soak them first and they will cook faster
  • Vegetables you have sitting in your fridge - I had 1 zucchini and 2 carrots - off we go!
  • 1 onion
  • 2 garlic cloves
  • Coconut oil, olive oil... just use the one you have already (works best with coconut oil though)
  • Curry; saffron; cumin; cardamom - be creative and choose others if you want, but if you want curry... better put in some curry, right?
  • 1 cup water
  • Salt
  • 200ml coconut milk OR soy/oat/whatever cream - works best with coconut milk
  • A bit of bell peppers
  • Also a bit of fresh ginger (dry ginger works also)
  • Cayenne pepper or a small chili pepper

Preparation

  • Chop that onion and garlic like there's no tomorrow

  • In a big pan put the coconut oil (or whatever you use instead) with the garlic and onion. Let it warm a bit while you chop the vegetables

  • Put the damn curry, saffron, cumin, cardamom, or any other spices you like. This is the most crucial step, do whatever you want before and after but if you want a good curry put the spices in NOW. Mix and leave it for 1-2 minutes. Don't hurry, go and finish chopping the vegetables if you didn't already.


  • Drain the lentils and add them to the pan together with the vegetables, the water and the salt (if you want). Let it be for 10 minutes, some 5-8 minutes more if you didn't soak the lentils before. Just try and taste for yourself.

  • Since you'll be waiting for 10 minutes, this is probably a good time to start thinking about your RICE. If you're eating a real curry, you better make some rice. But if you don't have any and you're hungry, please spend your 10 minutes watching this GIF and then eat the curry on it's own:


  • Good news is that rice is easy to make. If you're gonna buy rice because of this, grab some Basmati rice because it blends well with the curry. So the procedure is simple: mix 1 cup rice, 2 cups water, 1 bit of bay if you have it, and salt and GIVE IT FIRE

  • Well your 10 minutes should be over by now so just add the coconut milk, the ginger, and the cayenne pepper (or chili pepper, or any pepper). It's DONE and tastes like heaven. Trust me.

This looks amazing! And its so well written and entertaining, too. What did you mean with the lentils part though? Are they precooked and then you just add them? I never soak mine i just put a bunch of rice and lentils into my rice cooker and cook them up together. Or sometimes i just cook the lentils in there. It seems to take about 30 minutes to cook that way. I cant imagine them being done in 10, i should try soaking them! I will try your recipe the next time i get some coconut milk !

Thank you! I use mostly dry lentils, and I actually soak the lentils while I chop the vegetables... Even if it's only for a few minutes, they cook slightly faster. Just like beans and chickpeas. If I only have precooked lentils (which I hate), I add them with the coconut milk so they don't overcook.

It seems obvious to use coconut milk since it's an indian recipe, but I was amazed on how good the results were with soy or oat cream... they're a very good alternative if you don't have coconut milk at home and you just want some delicious curry

Looks yummy, didn't know one could actually add coconut milk, it's something worth trying but before i do, How was your meal?

It was great! I should say not as good as it uses to be because I forgot the salt and I accidentally put 1/2 cup more water... Yet it was pretty much yummy.

You should definitely add coconut milk if you have it, preferably the fat one. Since it is an Indian recipe it makes total sense :)
