VEGAN Oven baked sweet potatoes, filled with Indian egg plant dish called ‘baingan bharta’, topped with cilantros and accompanied by an indian lentil dish (Dhal) topped with some purple carrots and mushrooms.

Dear Steemians

Today i would like to share a recipe with you.

I used to work at various vegan restaurants in Zurich, Switzerland. On some mornings I would just have to freestyle with whatever was around in the kitchen. I did always have some smoked paprika around to season with and some masalas I made myself. Always showed up with fresh lemons, dates and cashews to make creams as complementary desserts.

1 sweet potato
3 cloves of garlic
2 ginger pieces (finger size)
2 onions
1 egg plant
1 cup of brown or orange Lentils
250ml of coconut milk
2-3 fresh tomatoes or tinned tomato without skin
Purple carrots
Mushrooms
Soy sauce
Madras masala
Garam masala
Black pepper
Cayenne pepper
Organic vegetable broth(cubes)

Preheat oven. Make holes into sweet potatoes using a fork.

Cut egg plant and boil in a pan with 1-3 cups of water or bake entire piece or cut pieces in an oven.

Cook brown lentils (pardina) with 3x amount of water. Note, orange lentils take half that amount of water or less.

Put sweet potatoes in oven for 35min at 200 degrees celsius.

Cut and add 1 onion, 2 cloves of garlic and 1 of the ginger pieces to a frying pan with some olive oil and vegetable broth.(note, i use cubes) Add 1-2 tomatoes and cook. Once the lentils are ready add this mass to it. Now add the coconut milk and madras masala. Add black pepper and cayenne pepper. Keep that with a lid on and turn off stove.

Fry some carrots in olive oil and then add mushrooms and one clove of garlic. Add some soy sauce.

Cut onions, ginger and tomato. Fry onions in olive oil and add ginger, vegetable broth(cube) and garam masala. Puree the egg plant and add it. Once cooked, add the cut tomatoes. Now add a few drops of soy sauce. Add black pepper.

Cut cilantro

Take sweet potatoes out of oven and slice in half. Put it on a plate. Slice in the middle and fill with egg plant mass.

Add the Dhal and top with a few carrots and mushrooms. Top with fresh cilantro or as you please.

I also recommend adding a cubic centimeter of fresh kurkuma in anything with coconut milk along with ginger and garlic in the beginning. Its that slight bitterness that gives food a really nice twist. Its also nice to serve the above dish with some quinoa or rice with a bit of kurkuma powder.
