The Lazy Vegan: Thai Green Curry (Six Week Health: Week One)
A Thai Green Curry on Jasmine Rice
One of my all time favourite meals to eat is something called a Mild Green Curry with tofu that I order at a place called Simply Asia here in South Africa. It's spicy, healthy, and absolutely delicious. I don't go a month without eating it. Recently I discovered that a supermarket chain that I love sells something called a Thai Green Curry Cook-In sauce. I bought it excitedly, and planned to make it with some of my favourite veggies and some Vegan beef pieces by Fry's.
This sauce is vegan, meaning it does not contain any animal-derived ingredients. Some green curry sauces contain fish oil, so if you're a die-hard vegan just keep that in mind.
I used green pepper, broccoli and cauliflower as the veggies, and jasmine rice as the starch. It's the best rice option to pair with any curry. Basmati rice is also great.
I think I got the jasmine rice right! I'm not the best cook, hence the name of this series. I enjoy anything I can just throw in a pot easily without too much sweat. Holler if you're the same.
I prefer adding firm tofu or chicken-style pieces to a green curry, but these beef-style pieces did the job. They had nice a nice taste to them. They would also be great stir-fries.
The finished product! Not as green as I hoped it would be, but a successful meal nonetheless. Let me know if you try something like this. In my opinion, the sauce isn't spicy enough. @chr7is liked the dish though. So I guess that's okay. Happy cooking everyone!
That tofu looks delicious, how did you get this color, is it some smoked variation?
It's a packaged meat-alternative (Fry's). So it comes looking like chicken style pieces, with a gravy powder that you mix with water.

I tend to lean towards extra firm tofu over fake meat products, but this looks good! Glad to see more vegan recipes on steemit! 🆒✨
I can't seem to make the tofu taste not horrible xD will keep trying.
One of my favorite ways to cook tofu is by soaking it in a little olive oil, liquid amino acids (Bragg's) or soy sauce, spiced with garlic powder, paprika + rosemary. Bake it or fry it! Deluxe!
Just think of it as a sponge for flavor, the flavors you put into it will shine if it is given time to soak into the Fu.
If you aren't full vegan and consume honey, I also recommend rubbing garlic rosemary and cayenne on thin-ish slabs of tofu. bake it till golden and top with a little honey drizzle :)
