LEMON , ROSEMARY AND THYME CHICKEN
TRY THIS RECEIPT ITS DELICIOUS
INGREDIENTS
- 2 full baby chickens about 500g each
- 1 Tbls garlic
- 1 Tbls crushed green chilli(pepper)
- 1tsp salt
- 2 lemons or lime juice about ½ cup
- 1 Tbls olive oil
- 300g chopped coriander leaves
- 150g parsley
- 3 sprigs of rosemary
- 1 tsp thyme
- 400g baby potatoes
- 200g baby carrots
- 1tsp lemon pepper
METHOD
Make a marinade with the garlic, green chilli, lemon or lime juice and olive oil .Coat the chicken overnight with the marinade or at least 3-4 hours. For best results allow to marinade overnight. Mix the remaining ingredients, the next day .Add to oven proof bowl and cover with foil. Bake for 45 minutes in an oven at 180 degrees Celsius and another 15 minutes at 210 degrees Celsius. Remove the foil and grill for 10-15 minutes be careful it doesn’t burn.
