Low fat, high protein mocha muffins recipe

Filled with healthy goodness & perfect for breakfast!

—I invented these muffins after having by baba. Losing body weight and regaining muscle strength whilst keeping my energy levels up were my main aim, as well as keeping a good diet for breastfeeding—

Makes approx 20 muffins

10 mins prep time (I used a food processor) 30 mins cook time.

Oven 190.

  1. Mix together: 140g unsalted butter, 220g granulated sugar, 2 eggs, 1 ½ cup fat free natural yoghurt, 1 tsp vanilla, 6 tbsp coffee (1 tsp coffee for each per tbsp water) you can substitute with decaf if preferred.

  2. Then add these ingredients one by one: 400g self raising flour, ½ tsp bicarb of soda, ½ tsp salt, 1 cup milk/dark choc chips. I then added a cup of healthy ingredients such as seeds, nuts, flax, hemp, millet, basically I used a breakfast sprinkle mix.

  3. Then I sprinkled oats on top each muffin and put in the oven to cook for 30 minutes.

DONE!

YUM!

I’m going to adjust this mixture nearer Christmas by adding ginger, cinnamon and nutmeg.. it’s going to be yum I think!!

Oh wow they look delicious but 220g is too much for me . I would eat around 10 in a heart beat so that would inta be 110g . I'll stick to 90% chocolate, home made
