Thai Food Recipe: Old Style Fried Rice (Khao Pad Rod Fai) 🍽

As some of you may know, in Thailand we have a lot food stalls on the streets. No matter at what time you feel hungry, midday or midnight, you can just walk out and find a made to order food stall selling nearby. This fried rice is special to me because it used to be available when I was a little girl. That means if you look for it now, you might not find it. And cooking it at home might be the only choice you have.

The reason I made this fried rice for our dinner today is because I have left over cooked rice from yesterday and some vegetables from the day before 🌥 if you've seen my last blog which is the vegetable coconut soup , you will notice the same ingredients 🌥 🍚 And as usual, this recipe is vegetarian so there will be no meat listed in the ingredients. 🎈BUT if you are not vegetarian, feel free to put meat instead of mushrooms. Also you can adapt or add more various vegetables in the fried rice.🎈

🏲 An important note for making a good fried rice is 🏲

  • Use rice that has been left over night in the fridge. Older rice will hold its shape better, whereas using freshly cooked rice can easily lead to wet fried rice.
  • When it comes to fried rice, stir means digging from the bottom to top. Never press the rice with the spatula.
  • Take your time when frying the rice as it will take time for all of the ingredients to mix well.
  • Remember, don't put too much tomato in fried rice because it will make the rice too wet.

Ingredients:

  • 2 ½ cups of cold cooked rice
  • 5 cloves of garlic
  • 2 eggs
  • 1 small onion
  • 1/3 cup of mushrooms
  • 1 spring onion
  • 1 tablespoon of vegetable cooking oil
  • 3 ½ teaspoons Soya sauce
  • ¼ teaspoon Black soya sauce (molasses mixes soya sauce)
  • 2 teaspoons Brown sugar
  • Half of green lemon

This is how I prepared the vegetables.

Directions:

  • Add vegetable cooking oil in a pan over high heat. Stir mushrooms in the oil until it cooked.

  • Scramble eggs and garlic in the pan but try not let them touch the mushrooms before the eggs are cooked. This is to help prevent the wet fried rice result. 🍳

  • When the eggs are done, add onion and stir until it is a little bit softer.

  • Add rice and tomato then stir for 2 mins.

  • Add soya sauce, black soya sauce and brown sugar. Keep stirring until there’s no lumps in the rice.

  • Add spring onion and remove from the heat. Serve hot with half a lime and some green vegetables.
