You like my ribs
One of the things about being a precious metals stacker(I collect gold and silver) is that it goes hand-in-hand with being frugal!
I say frugal, my friends and family say "tight", "scrooge", "stingy", "cheap" or "thrifty"..... basically, it means if there's a bargain to be had, or a cheaper alternative, im all over it.
So when a few packs of cheap pork ribs came my way, I had a craving for homemade bbq ribs. Full racks would have been best, but i can work woth individuals.
Unfortunately, living in a country where youre never a few hours away from a torrential down pour of rain, smoking meats and actually barbecuing has to be planned as a precision military operation. So i opted for tbe next best thing - the oven.
Ive youre already licking your lips and the thought of my sweet and sticky ribs in your mouth, then let me give you the quick run down on hownto mske them and the amazing sauce to glaze them.
You should never be scared when tackling such a simple dish. First steps is to get your meat in the oven.
- preheat your over to a medium/low temp of 140*c
- season your ribs with some soft brown sugar, pinch of salt and pepper
- wrap loosely in tinfoil and placenin the center of the oven
I hope youre not planning on eating anytime soon..!! You should leave these to cook slowly for around 2 hours. While these babies are cooking slowly and tender, its timemto start making the bbq sauce.
In a small saucepan, on low heat, you need to combine a few ingredients:
4 Tbsp Tomato Paste
2 Tbsp Brown Sugar
2 Tbsp Dark Molasses(opional)
2 Tbsp Apple Cider or White Vinegar
2 Tbsp Soy Sauce
2 Tbsp Honey
2 Tbsp Ketchup
2 Teaspoons Worcestershire sauce
2 Teaspoons Garlic Powder
2 Teaspoons Onion Powder
2 Teaspoons Salt
1 Teaspoon Chili flakes or dash of Hot Sauce(what ever you have laying about)
1 Cup Cold Water
Start by adding the water to the pan, add the sugar, salt and vinegar and bring to a gentle rolling simmer. Once the sugar and salt have dissolved add the other ingredients and continue to stir for a few minutes to combine. Allow to simmer for 30 minutes, and continue to stir occasion to prevent burning. Your bbq sauce should reduce by 1/3 and thicken up.
After 2 hours, turn oven up to 200*c and remove the ribs from the oven. Cover generously with the sauce, flip over and use the remaining sauce to coat the back side. Leave uncovered and return to the oven.
Once again, I hope youre not hungry as this takes another best part of an hour. After the wait though, youll understand why they take so long to cook.
