Note: For a delicious gravy, you can add a little coconut milk or coconut cream to the curry.

Method:

  1. First, boil the eggs and remove the shell. Cut a small slit on each egg, so that the oil doesn't splash while frying.

  2. Heat oil in a pan on medium flame. Add black pepper, turmeric, red chili powder, and salt to it.

  3. Now, add the eggs to the pan and fry for a few minutes. If you don't have a non-stick pan, you can use a normal pan or kadhai to make the eggs. Alternatively, you can buy a non-stick pan here.

  4. In another pan, heat some oil and add cumin seeds and garam masala to it.

  5. Add onions to the pan and sauté until they turn brown.

  6. Add ginger paste, garlic paste, green chilies, turmeric powder, red chili powder, and coriander leaves to the pan and cook for a few minutes.

  7. Add tomatoes to the pan and cook for a few minutes.

  8. Once the tomatoes are well-cooked, add water to make a gravy and cook for 2 minutes.

  9. Grind coconut flakes in a mixer with some water and make a paste.

  10. Add this paste to the gravy and cook for a few minutes.

  11. Now, add the fried eggs to the gravy and cook for a few minutes.

  12. Add garam masala and coriander leaves to the pan and mix well.

  13. Your Egg Curry is now ready to be served. Transfer it to a serving bowl and enjoy it with hot roti, naan, or rice.
