A rainy morning treat
We have had many rainy and snowy mornings. It's easy to get caught up in complaining about the weather, shoveling, the dropping temps, and road conditions. Well, there is another option to making a morning memorable, cozy, and heart warming. Here is my cure to making those mornings part of living a life of enjoyment with bragging rights instead of constant streams of complaints.
Dutch Apple Pan Cake
- 1 cup milk
- 1 cup flour
- 1 tblsp sugar
- 4 eggs
- 2 apples cored and sliced
- 1tblsp butter
Preheat oven to 400
Saute apples in butter over medium heat in cast iron skillet
Whisk together milk, flour, sugar and eggs and pour batter over apples
Place skillet in oven at 400 for 20 minutes, then lower heat to 350 and bake another 20 minutes
Serve with maple syrup (the real kind). I have fallen in love with this beautiful hand blown glass pitcher from Jamestown Glasshouse that I use for maple syrup, the opening is in the shape of a heart.And of course, coffee is always a good complement. We make our coffee with sweetened condensed milk, Vietnamese style, our favorite brand is Longevity. My daughter and husband love this breakfast treat and it has become a regular staple to beating those rainy or snowy morning blahs. I hope it adds a little sunshine to your morning.
