Thank you for the awesome words of encouragement! I'm glad you find the recipe worth trying. I did do a quick update related to the mop - you want to brush the meat every 20-30 minutes. Also, if you don't have pork loin available, this recipe works great with other cuts of pork. Let me know how it works out, and I hope you enjoy the tacos coming this Tuesday!
