What happens when you get tired of McCRAPNOLD's lol

This started out on a whim, while I was grocery shopping. I saw sausage meatballs for $2.99 and it looked SO GOOD, I grabbed 2 packages. 24 meatballs, but it is 2 different kinds. Not sure if I can tell the differences but that is OK. Here's how it all happened...

I was waiting for my good friend @eaglespirit to get back to me on discord, and I looked up a Swedish meatball recipe online. Way cool, my assumptions were correct for the base, Beef Broth. So when my little birdy (Eagle Spirit) :D gets back to me, I can just ask for some good pointers and not a 'from the start' How-To. Primo!

E.S. tells me I should brown the meatballs in a fry pan I said that was a good one, cuz my online directions were assuming frozen meatballs and it said just throw them in! Mine would have disintegrated I'm sure LOL!!! Sausage Stew... Yuk! So I basically cook them through, just in case. I do not want trichinosis :D E.S. also told me I do not need to use my broth al at once, just enough to keep it from burning. But here's the wrinkle... I don't have 'broth' I have a BASE and it needs liquid... water, anyone can do it that way. IDEA!!! I use BEER. I have a Yuengling traditional lager or 2 left over, I pour that right into the crock pot (12oz) and put in about 2 tbsp. of organic mushroom broth base. This stuff was SO YUMMY in the bean soup, beats the crap outta beef broth and besides, these are pork meatballs. Tossed in some Tajin Mexican Seasoning, some McCormick Cajun (I think I am out of Chipotle) seasoning, but it smelled like it was a match for the project at hand. A couple pats of butter for the hell of it and that was my sauce. Smelled really good simmering. The browned meatballs went in later, then the Salsa. I had bought new salsa just for this but I had a jar that was smaller and already open from just a few days prior, and it was MEDIUM Heat instead of Mild. Big Plus! It is all coming together very well, smells Great and I decide it's time for a taste! lol One meatball, tastes like a very good spaghetti version, but I think a bit more flavor is in order. 3 heaping tablespoons of SUGAR??? Hell NO, I have STEVIA! Both my parents are late-onset diabetic, none of that BS for me! :P I also threw in that entire can of La Costena jalapenos picture above! They are not the really hot type, just the nacho style. BTW, the peppers were in for the taste, I got that part bass-ackwards ;) It is kinda soupy, so a cup of whole grain Barley will make it more like a stew but I love barley in everything like this. OK, I'm weird! That;s why my peeps Love Me, cuz I embrace my inner psycho!
I'ma tag this one as food (DUH) I know we have tons of foodies on here and hopefully they will like this Franken-Swedish-Mexi-Meatball STEW as much as I do! It is really good, I am getting that from the last taste as I leave it simmering so the barley will cook fully. It's a late DUPPER Meal ;) I hope it's not too spicy for sleeping on!
Better eat LIGHTLY on it, and anyway, stuff like this is usually even better the second day! The flavors permeate better throughout the dish. I definitely have plenty for several meals! Here's a couple pix of the semi-finished product, w/o the lid is a bit blurry I must have been excited and overcome by the scent of the food ;) lol

Did it really taste good, I can't believe you put in a whole can of Jalepeno peppers. Yay, you did it and it looks great too. I love the write-up, so doodish but classy. xx

Yes, My Love, it was really DELICIOUS!!! The last thing I did "off the cuff' was edible, but BLAND! I could not even fix it with Hot Sauce! lol THANKS for the help I needed, I gained CONFIDENCE once U told me what I needed! :* :* :* :* :* I cannot thank you ENOUGH! :*

Watching the food network one night they did this show on a chicken and apples dish. You cooked the chicken with the apples (and other spices). The apples cooked down to like a soft squash-ish-ness, close to applesauce but not quite but that didn't stop me from thinking about the jar of applesauce don't seemed to want to eat in the cupboard so I got the bright idea the same objective could be accomplished by cooking the chicken in applesauce....lol....yup, I am still trying to live that one down with my kids to this day. They had some teen friends at the time that would often come by looking for a bit to eat....they are usually pretty polite critics but not so much that time around.

This is undoubtedly the strangest recipe for "Swedish" meatballs I've ever seen. But, meatballs go with lots of things so I'm sure you'll make something in here work. Except for the beer. Some people love beer ... so much they cook with beer. I am not one of those people. Apparently you are. Perhaps we can overcome this hurdle. @eaglespirit says she likes you. I'm willing to give you a chance. (Following you now. Don't disappoint me. Also gave you an upvote. Don't worry. That part is free. But I'm still expecting great things from you. Or @eaglespirit will have some 'splaining to do.)

I just used it because I had no liquid broth and I've seen the cooking shows where they use a bottle of wine and a few shots go in the dish and the cook ends up drinking the rest ;) It actually worked fine I guess, but I'd have been OK with plain water and my mushroom broth base. I will not go out of my way to get beer for cooking, it was just a novel idea that you hear about. IMO 'spirits' are like you and our friend Eagle, great to have around! Alcoholic spirits, meh, I can take it or leave it!

Put me in the crowd that swills the cooking wine while I'm sauteing mushrooms. It's one of my few vices while cooking. (Well, ok ... that and eating raw cookie dough, raw cake batter, pudding mix in the milk before it gets cooked. Sometimes the only reason I make cookies is so I can eat the raw dough. I am totally serious about that) It's just that I don't like the taste of beer. But anything else, oh, yeah, you betcha. Eggnog with rum. A margarita. Pina coladas ... oh, yeah, baby, clear the counter and keep 'em coming.

Your post actually reminded me I haven't made Swedish meatballs myself in a dog's age. So we got ground beef at the market yesterday ... and sour cream ... and egg noodles. And mine will look like Swedish meatballs when I'm done. But I think yours might have been really good, too.

I love to just "wing it" when the cooking bug bites me. It happens more than you might imagine ... and I come up with some really great stuff. Especially soups. Which we can enjoy while it lasts, because I never have any memory of how I did it, and couldn't write down the recipe for sure if I tried. That's ok. We made wonderful memories doing exactly this through the years.

And this 6'7" vegetarian Croatian taught me about "cooking with refrigerator garbage." Stuff most rational people would throw out in another few days goes in the soup. Carrots, onions, left over corn, broccoli, cheese. I'm not sure if he eats cheese. Vegetarians can be really weird. Him in particular. He also plays basketball. That alone makes him suspicious. (When he's not in Italy playing ball, he lives in a sewer -- dodging bullets. Croatia is a war zone, you know.)

His name is @awakentolife . Stay away from. He can be really mean. (Growing up in a war zone has its downside, I've learned.) Also stay away from some character named @catweasel. (He has no excuse for himself. No war zone in his childhood.)

He claims to be married to me, but he's shady as hell and really annoying. I need to come up with a better class of friends. I think tagging around after @eaglespirit can help with that. So far, at least. Only she's pretty chummy w/ @awakentolife. (She doesn't know him like I do. I've begun to question her taste a little. Maybe you can help restore my faith in her judgment. I can hope, anyway.)

Too spicy for 'mere mortals' I'd wager... it's about as spicy as I could make it for the kids, well, perhaps too spicy for "the girl" but I think "the boy" would enjoy it!
Hey Damus, what is a good (or passable) Canadian Beer I can get here in INDY? All I really know is LaBatts Blue which is good, but I thought there was one called Kuegel??? No real idea after LaBatts :D

I think this is meatballs in the Philippines- and yes its yummy . But to leave food for the second day? nah! food no more once cook😅..and if you will eat late better drink water , no more left for you....😭
