Foodie-licious: Tuyo Pasta (Dried Herring Pasta) 🍝

This is one of my fave pasta that is really easy to do and also "pinoy na pinoy ang sangkap!" with real Filipino ingredients! (laughs)
Usually dried herring or tuyo in Filipino is a dried and salted fish that can be preserved for a long time in a cool dry place provided it is in a tight container. Aside from being top Pinoy breakfast, this smelly but oh so yummy dried fish has gone a long way not only here in the Philippines but also in other countries as well. You can try "Tuyo" not only on fried rice or in Filipino "sinangag" but you can try different ways of how this lovely fish will be served. One day, I saw a book of Chef Bruce Lim and was curious about this tuyo recipe that even without a paper and pen you can memorize the needed ingredients. And so I decided to try this out! I want to share this recipe with all of you my way :)

my version of dried herring pasta!

Ingredients:

200g cooked spaghetti noodles (can be linguine, fettuccine or the like)
6-5pcs dried herring (here, I used tuyo-lapad)
1tsp chili flakes
3-4 calamansi (lime) squeezed
6tbsp olive oil (generous amount of olive oil depends on your preferred amount)
1 medium onion, minced
3 cloves of garlic, minced
edam cheese/keso de bola (since I have no edam cheese available I just used cheddar instead, the difference between the two is that edam is more mild in taste and not that salty as cheddar cheese)
salt (this is optional because dried fish is already salty, but whenever you need to you can sprinkle a bit)

Instructions:

  1. Fry dried fish, debone and flaked, set aside
  2. Heat a pan, Saute onion and garlic in olive oil
  3. Turn your heat into low then add your dried fish
  4. Sprinkle your chili flakes, let the fish be cooked slowly into the olive oil to release its flavor
  5. Add your drained pasta
  6. Add your calamansi
  7. Toss and plate, Add grated cheese and SERVE!

You can serve it with a whole tuyo on top and a slice of calamansi on the side :)
