ETON MESS Recipe, an English Classic and the best use of a strawberry since cream was invented!
This dessert is a timeless classic taken straight from an English Country Garden
Rumour had it it was invented during the 1920s when, during a cricket match at the famous Eton College in England, a Labrador sat on a picnic hamper, crushing the strawberry pavlova that was nestled inside. Undaunted by the ‘disaster’ the Etonians apparently carried on regardless and tucked in happily to the ‘mess’ that was their dessert. Preferring it to the pavlova it became an annual summer staple. Well - that’s the rumour, and a mighty fine whimsical serendipity it would be… except, years later it was claimed a chef at the college simply came up with the dessert in the 1930s. Which do you believe? Which do you want to believe? I’m so going with the Labrador tail, er tale.
Making this could not be easier and it's best made then eaten straight away (like all desserts really!!).
So, into a bowl goes the Strawberries and some sugar; you need to mix through the sugar and lightly bruise the Strawberries to help release some juice and then pop to one side.
In an another bowl beat your cream and then break in the crunchy meringue, once done, pop in the Strawberries and give a final gentle mix before serving.
How easy is that, honestly anyone could make this!
To make this you'll need:
300ml Double Cream (Heavy Cream)
100g Hard Meringue
1 tbsp Icing Sugar
1 tbsp Caster Sugar
300g Strawberries
