Every year around Valentines day it’s the season of the “Skrei”. Skrei is a codfish that you can only order a few weeks a year. The season starts at the first full moon of the year until the end of march.
The name “Skrei” comes from the Norwegian word “skreid” which means wanderer. It’s a symbolic name for the long journey the Skrei makes.
During mating season the Skrei travels from the Barents Sea to a Norwegian island group called Lofoten.
During his trip, the Skrei doesn’t eat a lot. Mostly just some schrimps. This makes it a firm low fat white piece of fish.
So i bake them in some butter.
My garnish for today: celeriac cream,
some very shortly baked spinach with spring onion,
North sea schrimps,
and a little Hollandaise sauce.
And now we are ready to serve.😉

Looks lovely! I miss those Belgian grey shrimps! Can I ask you how you prepare those gray shrimps when you want to put some on a chicory leave as a starter? My old Belgian colleague made it once before at a potluck party, I can't forget how tasty it was.. : )
Hi thanks, just boil them 3 to 6 minutes in salted water. Then cool them down. Ready to peel.😄
