This is a really spicy dish…And when I say spicy, I mean really SPICY!
So, in case you want to experience a shrimps version to remember, this is the one!
Ok it is up to you how much portion of chilli flakes you will use, nevertheless you may be a bit adventurous!!!
Ingredients: 1kgr small shrimps cleaned well (we keep the shells and heads to make shrimps broth: with 1.5 glass of water, 1 star anise and a little ouzo, boil for 20’, strain and keep the broth), 2-3 fresh spring onions chopped, 1 green bell pepper chopped in sticks, 1 red bell pepper chopped in sticks, 3 average zucchinis chopped in sticks, 10 cherry tomatoes tomato cut in two, 30ml ginger juice, 3tbsp fresh coriander, 2-3 tbsp olive oil, salt, 60 ml ouzo, 60ml white wine, 1 espresso spoon of chilli flakes (quantity is at your discretion), ½-1 glass of vegetables broth. Optional: to serve use boiled basmati rice, a few leaves of fresh parsley and some avocado slices
In a deep pan you sauté all the vegetables in the olive oil in high fire. Once they turn light brown, we add the shrimps. We reduce the fire and let it be cooked till the shrimps turn red. I add ouzo and white wine. Once the alcohol evaporates add a pinch of chilli flakes and salt. Add some vegetables broth and some shrimps’ broth till you cover the ingredients. Once the juices are absorbed, add the fresh coriander and the ginger juice.
We serve with basmati rice, fresh parsley and avocado.
