Because the head when cooked gives more flavors... we keep the tail for esthetic reasons..
If you don't keep the heads on it is like using shrimps from a can...like in Italy!!
When I worked in an Italian restaurant (in Toronto) I have taken off the heads and tails of thousands of shrimp (Shrimp Paesano was the specialty of the house) to prepare them for the chef.
I was really surpried, my very first day in Greece, at what I saw served to me in the restaurant when I ordered a shrimp dish. I mean, they put batter on the outside of the shell before deep frying them and serving them, head, tail, shell and all! What's the point of that? It makes for a very messy eating experience :-)
Good thing that the rest of Greek cuisine is so good LoL
They served you fried shrimps with their entire shell also fried??? That is not greek cuisine, that is bad cuisine! Don't go there!
