Pork in the oven, escorted by potatoes
In my home, we have a great love for meat.. unfortunately! I try to not eat that much, but, it is not always easy. You see my father has from time to time reared pigs, as well as chicken! ok, I hate eggs. But it is always good to have fresh products from animals that more or less eat what we eat at home.
This is a classic recipe of my mother’s. Also it is a customary recipe of the Greek cuisine.
Ingredients for the meat: 1 kgr of pork steaks, 1 glass of beer, 1 onion chopped, 10 allspices, 2-3 bay leaves, 2 sticks of rosemary, 1 tbsp of mustard, ½ cup of olive oil
Ingredients for the potatoes: 1 kg of potatoes, 2-3 gloves of garlic chopped, salt and pepper, ½ cup of olive oil
Put the meat in a deep bowl along with the beer, the onion, 4-5 all spices, 2-3 bay leaves, 1 stick of rosemary and salt and pepper and let it marinate for 5hrs.
Then put the meat in a baking tray and pour over a sauce made of mixing olive oil, mustard, salt and pepper, the remaining rosemary and the 5 allspices. Also, add ½ glass of water. Put in the oven in 200C. Once the meat starts gaining colour, turn it to the other side.
In the meantime, in a deep bowl, clean your potatoes and cut them in pieces. Add the olive oil, the salt and pepper and the garlic and mix well. In the tray, once you turn your meat to the other side, add the potatoes. Also, add some water. Bake for approximately one more hour.
