Octopus with black-eyed peas
Black-eyed peas is one of the foods that remind me of my childhood..why? I don't know.. It is not a typical children's meal, yet I remember having them often at home with olive oil, vinegar and spring onion.. memories is a funny thing. You remember things of no significant importance whereas others more important ones are lost in oblivion. Also, every saturday we used to eat roast gilt-head breams which I can't eat since I became an adult..
Anyway..onto the octopus:
Ingredients: 1-1.3 kgr of octopus cleaned well, 2-3 bay leaves, 1/2 cup of vinegar, 2/3 cups of olive oil, 1/2 cup of whiskey, 2-3 gloves of garlic cut in pieces, 1 onion, 1 tbsp of cut parsley, 2-3 cut spring onions, salt and pepper, 250gr of black-eyed peas
First you boil some water and put the black-eyed peas to boil for 10'. You strain them and throw away this water. You put them in the pressure cooker, cover them with water, close the cooker and let them cook for 20'. Open it, check they are done (depending on the legumes used), strain and season them. Put them on the side.
Put the octopus in the pressure cooker with some water and let it boil for 10'. Throw away this water. Then put your ingredients in the pressure cooker: the olive oil, the vinegar, the bay leaves, the whiskey, the onions and the garlic and mix them well in medium heat. Add the octopus, close the cooker and let it cook in low fire for 35-40'. Open the cooker and your octopus must now be ready. Add some pepper, a little salt (if needed) and take out the bay leaves.
In a big plate spread the black-eyed peas, the octopus, the spring onions and the parsley. Pour over the octopus' juices. Optionally you may add a light sauce of olive oil and vinegar.
