Multi colored vegetables in the pot

Well a summer is not a summer, if you don’t take advantage of all these fresh vegetables! So I decided to make this food out of adoration to summer!

Ingredients: 4 medium sized potatoes cut in big pieces, 3 onions cut in pieces, 5 carrots cut in big pieces, 3-4 zuchinis cut in big pieces, 3 medium eggplants cut in big pieces, ½ bunch of parsley chopped, 10 tbsp of olive oil, 1kgr of homemade fresh tomato sauce, 2 tomatoes cut in pieces, salt and pepper, 1 glass of vegetables broth

In a pressure cooker, put 3 tbsp of olive oil along with the onions and let them sauté. Put the potatoes and the carrots and mix well. Also, add half the broth and the tomato juice and close the cooker. Let the food simmer at first in medium to high heat and then reduce to law heat for 20’. Open the pressure cooker and check if the potatoes are almost ready. If so, add the eggplant, the zucchinis, the fresh tomatoes, the rest of the broth and some water, if you think is necessary. Also, add half the parsley, salt and pepper and close the pressure cooker for another 10’.

Open and the food must be ready. Sprinkle the rest of the parsley and olive oil all over your food.
