Lent has started: veggies in the oven

This is such a simple and tasty little recipe for vegetarians..

Ingredients: 5-6 medium sized potatoes cut in pieces, 2 tomatoes peeled and cut in pieces, a handful of frozen mixed vegetables -like pees, carrots and green beans, 5 white mushrooms cut in pieces, salt, pepper, rosemary, 1 finger of ginger cut in pieces, 1/2ltr vegetables broth, 3 tbsp of olive oil, 2 tsp of mustard

Put in a tray altogether, mix well and cover with aluminium foil. Put in pre heated oven in 180-200 C for an hour. Uncover and let it roast for another 10'.
