Fish soup: a summer dish!
Can you think of a more alluring dish if you find fresh fish?
Ingredients: 1kgr of redfish well cleaned, 5-6 potatoes cut in pieces, 2-3 carrots cut in pieces, 1 stick of celery, 4-5 small onions, ½ glass of olive oil, salt and pepper, ½ lemon juice
In a deep pot, I put all the vegetables in some water (to cover them) and let them boil with half the olive oil, until they are ready. I take the vegetables out of the pot, leaving the juices in. I put some salt on my fish and put it in the pot, along with the remaining olive oil. I let it boil for about 15’.
I take the fish out of the pot and try to strain the soup so as to remove any unnecessary fish bones.
I take a glass of the soup, 4-5 carrot pieces, 4-5 potato pieces, 1 onion, the lemon juice and mix them in a blender. I pour the mixed vegetables in the soup, season the food and toss well.
Some people prefer to melt all the vegetables. It is a matter of preference. Also, you can either re-put the vegetables and the fish in the soup or keep them separately. We usually put back the vegetables and keep the fish on the side.
As a salad we had fresh boiled beans and homemade bread.

Hey, @tikotiko! You killed me with that fish soup! It's a food I adore, but unfortunately I rarely prepare it. In Romania, more is known the fish bors, with freshwater fish and more sour. The fish soup I met after I started going to Bulgaria at sea and soon in Thassos.
This soup after your recipe will be done next week. I can not wait.

Oil depends on the kind of fish used. If they have a thick skin and are rich in oils themselves, you dont need much!
